The sacred olive tree is considered to be among the earliest fruit trees cultivated in history. It was of major importance to Greece and according to mythology it was Athena's gift to the city of Athens. Koroneiki variety, of which the Sgouromallis' family olive oil is made of, stands among the best internationally recognized varieties, producing fine olive oil of unique quality.
The olive fruit is picked at the finest maturity stage (shading from green/yellow to black/ purple), when the content in phenolic compounds is sufficient and the aromatic
components are rich, and it is then transported to the olive mill, where the temperature of malaxation and oil extraction is under 27°C, in order to preserve its phenolic levels and aromas.
So the olive oil is obtained through a purely natural processing, making a natural fruit juice ready to be consumed and enjoyed. It should be noted that the olives are carried to the mill on the day of the harvesting, thus avoiding fermentation, rancid, musty and fusty sediment, as well as the loss of their aromatic and phenolic components, producing an extra virgin olive oil.
